Chef Dylan Ellis is the Executive Chef of Dominion Bar + Kitchen.
"My love of food began at an early age by spending time on my Grandmother’s farm in South Africa. I grew up in a family that lived farm to table in the truest sense of the term. My Grandmother taught me how to grow, harvest, cook and preserve the fruits and vegetables she had grown and the meat we butchered, cooked and preserved was hunted by my uncles for the season. As soon as I was old enough to contribute I earned my dues in the family Boxing business, my father being a respected boxing promoter, our family did a weekly event for nearly 2 decades.
Since moving to Canada my longing for the vibrant and dynamic food culture that I grew up in led me to pursue a career in culinary. I have a worldly palate I am able to bring the unique perspective and experience in a wide array of businesses to the running of a successful kitchen.
This fresh perspective has allowed me to advance quickly through the ranks of the kitchen."
